Dear friends,
Starting in September we began the harvest of the olives.
First we picked the unripe-green olives. These will lie in saline water, for 6-8 months, until fermentation is complete, to eliminate their bitterness and make them softer. They will then be crispy, fusty and very healthy.

We went on to harvest the black-ripe olives which will go through a shorter period of processing and we haven’t finished yet.

We now started harvesting the olives for olive oil. As soon as we pick them from the tree we take them to the olive press, where, through cold extraction, we will have our olive oil.

All our products are organic.
We admit that we do not know everything so Stefanos has to leave the farm every once in a while and sit at a desk again to be further trained in pruning, fertilizing the olive grove, producing quality olive oil etc.

Marina has attended, conference, seminars, presentations at a number of touristic exhibitions which have taken place this time in Athens. She has collected ideas for 2018.
